Nut Butter Date Bliss Balls
A little about this recipe
These bliss balls are the perfect bite-sized snack - naturally sweetened with dates, rich in nut butter, and boosted with chia seeds. They’re quick and easy to make, and are great for keeping in the fridge when you need an energy pick-me-up.
Ingredients (makes 12-15 bliss balls)
180g pitted dates (even better if they’re medjool dates!)
120g peanut or almond butter
15g cocoa powder
10g chia seeds
Pinch of salt (optional)
15 - 30g water, only if needed
Method
Soak the dates for a few minutes in warm water to soften. Add them to a food processor and blend until sticky.
Add nut butter, cocoa, chia seeds and salt, if using. Blend until smooth. If the mix feels a little dry, add a splash of water.
Roll into little balls, about a heaped teaspoon each. Optional: coat in desiccated coconut, chia seeds or cocoa.
Chill for 30 minutes before enjoying. Once set, transfer to an airtight container. Keeps for about one week in the fridge.
